4 ROMANTIC SIPS THIS VALENTINE'S DAY

That time of year is approaching when a cheap bottle of wine and flowers from your local garage won’t cut it.
Pink drinks, berries and chocolate are always a winner.
Here are 4 drinks we want to sip with our loved ones.
Pink Champagne
It wouldn’t be Valentines without a glass of bubbles... and for us it has to be pink bubbles and a bit of indulgence.
Billecart-Salmon Rosé is a firm favourite of ours. It goes well with most foods but delicious to sit and sip in front of the fire.
Big flavours of wild strawberry and raspberry shine through, balanced with a subtle citrus zest.
Serve in a chilled flute and a slice of strawberry to bring out those berry flavours.
Pink Gin
Pink is the colour, gin is the game! There are lots of pink gins to choose from, but we keep going back to Copeland’s Raspberry & Mint.
It pairs really well with elderflower tonic water or even lemonade if you have a bit more of a sweet tooth.
We love using it in our sweeter cocktails here in The Spirit Circle.
Raspberry Ruffle Cocktail
This is a cocktail I’ve been making for two decades with various tweaks over the years. Hoping to put it on our Spring menu later this year.
Copeland Raspberry & Mint, Creme de Cacao, Kadoo Carnival Coconut Rum, Coconut Syrup & Cranberry Juice.
Shake all together with ice and strain into a chilled coupe. Garnish with some crumbled Raspberry Ruffle sweets.
Warning… this drink is seriously addictive and they're also Phil 1's favourite sweet.
VALENTINE'S Delight
For anyone who prefers not to drink alcohol, try this beauty.
Lyre’s 0% Pink London Spirit Gin, Raspberry Syrup, Fresh Lemon Juice and a few dash of Vegan Foamer (we use Ms. Betters Miraculous Foamer).
Dry shake (without ice) first and then shake and strain into a chilled coupe. (If you can't get hold of a vegan foamer, use the white of one egg.)
This drink is full of berry flavours, fresh citrus tones and won’t leave a fuzzy head in the morning.
So, that's Valentine's Day sorted for you, from a drinks POV anyway! I'm away to eat a raspberry ruffle.
