Quite the Find with Redbreast Whiskey & Waterman House Event

A sensory collaboration of dreams? Honestly… it really was!

We teamed up with Redbreast Irish Whiskey and Waterman House to bring Quite the Find to life and were delighted when it sold out!

It was one of those nights that leaves you standing in the room afterwards thinking, “Yep. This is exactly why we do what we do!"

The perfect mix of great people, beautiful Irish whiskey, incredible food and drinks - and a Sensorium experience that tied it all together.

We started by inviting guests take part in a range of interactive sensory experiments including aroma discovery, palate challenges and more as we encouraged everyone to experience Redbreast in a completely different way to what they're used to!

Guests got to try our own Redbreast whiskey serve creations (which went down very well, we have to say!) and we paired each person with their ideal cocktail based on their individual sensory profile. Watching the room enjoy their paired serves and seeing the nods of agreement just puts a smile on our faces!

And then there was Joe Magowan from Redbreast, who guided everyone through some truly special tastings. Not only did guests explore a range of incredible expressions, they even got to try a 27-year-old Redbreast. Each whiskey was thoughtfully paired with a four-course tasting menu designed to complement the flavour profiles.

The food? Unreal.

From cured Glenarm salmon to delicate Kilkeel scallops, seasonal wild venison, and a show-stopping grilled pineapple dessert, every dish felt considered and beautifully balanced. Each course didn’t just sit alongside the whiskey - it elevated it. Pineapple and Whiskey - who knew?!The pairings sparked conversation at every table as people compared notes and discovered new flavour combinations together.

Collaborations like this mean a lot to us. Bringing together a heritage brand like Redbreast with a venue as special as Waterman House, and layering in our Sensorium experience, creates something that feels more than the sum of its parts.
